We work with 100% Peruvian products from different regions, our beef is from regenerative livestock, our fish and seafood from artisanal fishing, our vegetables from local producers who work with organic principles. Our recipes and dishes have homemade flavors that influenced our chef from a very young age as well as optimal cooking techniques that use parts of the food that you have probably never tasted before but turn out to be exquisite. Our portions are for sharing at the center, whether you choose a la carte or tasting menu you will enjoy group dining.

He is a renowned chef whose career transcends the kitchen. With years of experience in the best culinary spaces in Peru and the world, he focuses on sustainable food practices and improving nutrition. He has designed courses for prestigious institutions, has been a culinary ambassador for the WWF and has represented Peru in international events. Palmiro is also co-founder of CCORI COCINA ÓPTIMA, which develops educational programs on food optimization for community kitchens. He has co-authored books on innovative culinary practices and continues to contribute to sustainable gastronomy through various projects and consulting roles.
